Margarita dressing
In my humble opinion, Cinco de Mayo should be celebrated once a month if not week.  There is nothing like the amalgamation of fresh lime and blue agave with just a hint of orange liquor to slow you down enough to stop and smell the cactus flower.  While a full fledged cocktail hour might not always fit into your schedule, this dressing will bring the spirit of the 5th of may to any meal. 
 
Our margarita dressing is terrific for vegetable, rice and bean salads.  It also makes a delicious marinade for poultry and fish.  Try it in your ceviche!


Pour the ingredients into a cocktail shaker or jar and jiggle vigorously for a couple minutes.  It is best if you make it a day ahead of use.
