We first made this a couple years ago with tomatoes grown from the seeds a Russian friend brought back from Siberia. We long for August when the past year's supply has run out.
- 4 cups tomatoes chopped fine and juices.
- (Siberian tomatoes are just delicious in this.)
- 2 tbsp Midwestern Garden Radish
- 1 cup brown sugar
- 1 cup Oregano and Thyme Vinegar
Preheat medium pot on stove top. Add tomatoes and 1 tbsp Midwestern Garden Radish. Let simmer on medium setting for 40 minutes. Stir occasionally.
After 40 minutes add remaining tbsp Midwestern Garden Radish along with brown sugar and Oregano & Thyme Vinegar. Simmer fore another 30 minutes or until the ketchup has thickened to your liking. Stir occasionally. When ketchup has cooled pour into an airtight jar. This will keep in the fridge indefinitely.
