Shrimp and Black Bean Salad

This is a simple and satisfying salad.  Fresh flavors to please the palate all year long and a sensational recipe to have in the fridge on a hot and busy summer night.

• 1 pound shrimp
• 2 cups of black beans
• 2 cups of corn
• 2 large diced tomatoes
• 1/2 cup chopped scallions
• 1 large avocado diced
• 1 cup of shredded carrots
• 1 tsp Picante Passion
• 1/3 cup Margarita Dressing

Spray a saute pan with vegetable or olive oil cooking spray, and saute shrimp which has been tossed in Picante Passion. When the shrimp is cooked mix it in with a salad of black beans, corn, tomatoes, chopped scallions, avocado and shredded carrots. Let marinate in the dressing for at least 1 hour. Serve in margarita glasses, rims dipped in kosher salt. Top with a wedge of lime.
